When making the transition to a plant-based diet, most of us do really well with breakfast and lunch, but when it comes to dinner, find ourselves in a quandary. The question I have heard most often over the years is “So, what do you eat?”
Here are a few creative recipe ideas for your next meal. Enjoy!
8. Coconut Curried Tofu and Spinach
10. Quinoa Nachos
Oh yum thank you for this! As a vegan I am always after new recipes!
You are welcome! Thanks for checking out my blog 🙂
I’m seeing a lot of these “what vegans eat” kind of lists, and I think they’re a great idea. I’m going to take a look at that meatloaf recipe!
Thanks, Katherine!
All your plant-based entrees look delicious! The nachos will be a big hit in my family.
Awww, thanks! I hope you try a few of these tried and true recipes!
One struggle I’m dealing with at dinner is even though I don’t eat meat, I still think I need something with similar mouth feel and look, which really makes no sense because if I don’t want to eat meat, why do I want something that looks and tastes like it? But it’s years of habit I’m working to change. Thanks for the recipes!
I totally get that, rumpy. Some of the faux meats have better texture than others. I can recommend the Field Roast products. Also, a product called soy curls (available through amazon.com and directly from the manufacturer in Portland, OR has a meaty, chewy texture. There is also a way to make tofu, believe it or not, where it has more of a “meaty” texture, a lot like chicken breast. Let me know if you are interested and I will write a post on that method.
Please do! Thanks!
Okay, Jen! Stay tuned 🙂
Also, I find mushrooms can have a nice, meaty influence on a dish and I have started breaking whole mushrooms apart with my fingers instead of slicing them before adding them to a stir-fry or saute’. It gives them a totally different texture!
I found a recipe for a savory pie using baby bellas and it was fantastic!
Yum! Mushrooms and tamari I find, when they are together can have a “meaty” influence in a dish 🙂
Thanks for the like! This is a great go-to page to pin and read for those days when I just don’t know what to make for dinner!
Aww, thanks, Kelsey!! I really appreciate that. Sharing great recipes is my passion 🙂
So many delicious dinners! No one’s going hungry on your watch! 🙂
Aww, thanks for stopping by Starr! I really enjoy your blog, too!
This is fabulous! and answers a question I have asked for the last decade: why do vegetarians & vegans have to put up with boring main courses! No longer!!!! Can’t wait to try the BBQ and the Chilli!
No longer is absolutely right! I wasn’t always vegan and when I set out on this journey I was intent on getting the most flavor out of the experience as well as veganizing the comfort food recipes I grew up with. For some, veganism is a minimalist lifestyle, though–a way of simplifying food: vegetables, beans, grains. Some are purists in that sense and I respect that. I have to say I am a bit more hedonistic in my approach. It’s all about balance 🙂
I hear you! My latest kick is vegan-izing my favourite baked goods to see if I can get them to taste better than their non-vegan counterparts – have had pretty good success so far!
Hi Melanie – this is great, love these. I would love to feature some of your vegan recipes on plantpoweredyou.com is that ok? I would of course link back to your site.
Best wishes
Paul
That would be lovely, Paul. Thanks!
